Dinner da Mamma T-Shirt
This idea came through like a eureka on a grey afternoon in December 2011 on our way home after lunch at a renovated restaurant in London.
Smith3d and Frack were walking while talking about good food, chefs and restaurants and at a certain point, they both looked at each other’s eyes and knew something special had just happened. They felt like they were tuned to a frequency of a radio station and a message was coming through.
That’s how “Dinner da Mamma” was taken into this wold.
“In my travels around the world, I spend a lot of my time eating with other chefs. […] I listen to what people say. I watch what they eat.
When we jokingly ask each other which dish we would most like to eat if it was our ‘last’, the answer is always a simple one.
Nobody ever says that they would like a 14 – course meal in a Michelin-star restaurant.
On the contrary, the word ‘Mamma’ is often mentioned.” Anthony Bourdain – Kitchen Confidential (2002 Bloomsbury)
WHAT IS DINNER DA MAMMA?
– IT’S A NEW EXPERIENCE, ALWAYS DIFFERENT
– FOOD OF AN ITALIAN “MAMMA” (MUM) IN LONDON
– LOVE FOR TRADITION, ATTENTION TO THE FUTURE
– QUALITY AND FRESHNESS; HEALTHY AND SUSTAINABLE
JUST ANOTHER ITALIAN RESTAURANT IN LONDON? NO!
DinnerdaMamma proposes a different culinary experience, it’s not a traditional restaurant.
The chef constantly changes. There is no menu to choose from.
All the ingredients are seasonal.
It’s about the love for surprise and for discovery. Each mamma proposes something different.
The best Italian mammas alternate cooking in the kitchen and it is for this reason that dining at DinnerdaMamma feels like being at home.
“ some of the best chefs in the world, even if they haven’t completely abandoned the idea of the traditional restaurant, as in the ones awarded in the Michelin guide, are now considering other options”.
Anthony Bourdain – Kitchen Confidential (2002 Bloomsbury)
THE TRUE ITALIAN CHEFS
The mammas are ordinary people; but they are not simple women, not at least in Italy.
A mamma has a central role in the family; she runs the household, looks after the children, and most of all cooks.
Women in the kitchen pass their traditions and recipes from mother to daughter, even if things are slowly changing nowadays.
Real mammas still exist!
DinnerdaMamma selects the best Italian mammas and brings them to London. They share their culinary secrets with us and prepare their homemade dishes in our restaurant, as only they know how to do.
Our kitchen will be in open view and our theatre whilst the mamma chefs are our artists.
LOVE FOR TRADITION
The history of Italian cooking is very unique.
The identity of Italian cuisine slowly developed throughout the centuries, but its essence was born towards the end of the 18th century. Thanks to the creation of the first cookery books, traditional regional dishes were grouped together and their appeal was spread throughout the country.
At DinnerdaMamma, every mamma will cook a selection of the traditional dishes of her region of origin (Tuscany, Sicily, Veneto…). At the end of the evening, the recipes will be given to clients in order to maintain the tradition and pass on the secrets of our cuisine.
It’s this regional uniqueness that is the strength of Italian cuisine nowadays. It makes it contemporary and also more fashionable than other cuisines, like the French one, which historically has been based on a more uniform, national form of cooking.
(Massimo Montanari – Il cibo come cultura, Edizioni Laterza 2006)
Today the cuisine reflects ever-changing times in respect of the different cultures in Europe and the world.
That’s why, the model proposed by DinnerdaMamma is innovative and reflects, more than ever, the present time.
QUALITY AND FRESHNESS
DinnerdaMamma selects only fresh and seasonal food in both Italy and the UK.
The food selected is quality assured and responsibly sourced, maintaining the economic future of the culinary sector.
The evening menu changes with each mamma and it reflects the seasonal availability of the food.
The concept is that customers do not choose from a menu but have the opportunity to try various dishes that are on offer that evening.
This allows for the optimisation of resources, assured freshness, and avoids food waste.
When I have the chance, I buy my groceries in places that I hadn’t considered before. By just going out of the city centre, it’s possible to find small farms or local shops that sell great food at reasonable prices. Buying groceries in these places, makes me feel good.
